Spring at Windrose Farms

Windrose is a small family farm located east of Paso Robles. Tucked in a unique valley of 50 acres, owners Bill & Barbara Spencer have been organic from 1999 to 2009, but are currently transitioning to biodynamic.  The farm has been “clean” for twenty years; since its purchase in 1990. For the first three years, Bill worked to bring life back to the soil with compost and cover-cropping yearly. In 1993 Windrose began going to the Farmer’s Markets with produce from their first small market garden. At that time both Bill and Barbara were involved in other occupations. At the end of 1995 they took the plunge into full-time farming. Having already discovered the enjoyment of growing many “specialty” varieties of vegetables they also found they loved selling to wonderful restaurants as well as to their friends at Farmer’s Markets.

This event is the first in a series of seasonal dinners hosted at the farms by the farmers who provide Thomas Hill Organics the bountiful produce, herbs and meats that make our restaurant such a staple in the farm-to-table community on the Central Coast. Join Bill and Barbara Spencer at the farm for a tour before savoring a delicious meal – a tentative menu is provided below. All dishes subject to change without notice based on item availability.
